     CAULIFLOWER STUFFING

2 Tbsp coconut oil
1 red onion chopped
2 large carrots peeled and chopped
2 celery stalks thinly sliced and chopped
1 small head cauliflower chopped into tiny pieces (food processor)
1/4 cup chopped parsley
2 Tbsp chopped fresh rosemary
1 Tbsp chopped fresh sage or 1 tsp ground sage
1/2 cup vegetable broth
Salt & Pepper

Saute coconut oil, onion, carrot, & celery for 7-8 minutes.
 
Add cauliflower and sauté 5-10 minutes more.
 
Add parsley, rosemary, sage and vegetable broth.  Cover with lid and cook another 15 minutes.
 
Salt & Pepper to taste
 
Serve hot, leftovers are good even cold. : )

Cauliflower is often considered one of the healthiest foods on earth- and there is good reason why. With its rich supply of health-promoting phytochemicals, high level of anti-inflammatory compounds, and ability to ward off cancer, heart disease, brain disease, and even weight gain- it seems there isn’t much cauliflower can’t do.
