     Fennel & Orange Salad

1 Fennel bulb cut thinly with mandolin
2 Oranges cut into small pieces
1 Tbsp Olive Oil
1Tbsp Red Wine Vinegar
Sea Salt and Pepper to taste

Place all ingredients in a bowl and toss well.

Fennel is super crisp and refreshing when raw, it has a light but distinct licorice or anise flavor.  All parts are edible although for this recipe use only the bulb. You can use the stalk as a garnish in another dish to add some texture and flavor.
 
Fennel is an excellent source of dietary fiber, potassium, manganese, copper, calcium, vitamin C, magnesium, iron, folate and niacin.
