     RAW LEMONY SQUARES

CRUST
½ cup dates, pitted
½ cup pecans
½ cup walnuts
¾ cup almonds
3 Tbsp. honey
¾ cup shredded coconut
Pinch of sea salt
 
Topping
1 ¼ cup dates, pitted
3/4 cup walnuts
Zest  from 1 lemon
Juice of 1 lemon
Pinch of sea salt
1 tsp. psyllium powder

Prep:
Presoak dates and walnuts listed under topping ingredients for at least 2 hours.
 
Crust:
Process almonds into a meal in food processor.  Process with rest of crust ingredients in a “dough:.  Press into a 8x8 pan.
 
Topping:
Process topping ingredients in food processor until smooth.  Spread onto crust.  Sprinkle top with coconut.
